Most kids love eggs and pancakes, so why not combine the two breakfast favorites for an adorable-looking dish? Here’s how to whip up this simple breakfast dish:

Makes four servings.

Ingredients:

8 pre-made frozen pancakes (You can make them ahead of time or buy pre-packaged frozen pancakes)

8 medium eggs

1 cup maple (or pancake) syrup

Non-stick cooking spray

Berries (optional)

Thaw the pancakes and set them on a large cooking sheet sprayed with non-stick spray. Use a round 1 ½ inch diameter cookie cutter to pop out a circle in the middle of each pancake and set the removed pieces aside. Inside each pancake hole, crack an egg. Place in the oven pre-set at 300 degrees for 10-15 minutes or until the egg sets. Serve with the cut-out pancake piece on top of the egg with maple syrup on the side. You can top it with berries for a final touch.

Cold cereal is fine for school day mornings, but a hot bowl of granola hits the spot. The texture is delightful, and the crunch and chewiness are so satisfying. Serve your homemade granola with steamed milk, and you’ll have the ultimate comfort food.

Makes four servings

Ingredients:

3 cups rolled oats

¾ cup honey

¼ cup molasses

¼ cup dark brown sugar

¼ cup dried cranberries

¼ cup golden raisins

¼ cup chopped pecans

¼ cup slivered almonds

2 tablespoons ground cinnamon

½ stick of butter

4 cups low-fat milk, steamed (You can use soy or almond milk instead, or any type of milk you prefer)

Place all ingredients (aside from the butter) in a large mixing bowl. Melt the butter in the microwave and mix it with the other ingredients until everything is well-coated. Pour the mixture onto a large cooking sheet and spread evenly towards the sides and corners. Bake in the oven at a pre-set 325 degrees for 25 minutes or until golden brown. Spoon the granola into bowls and pour the steamed milk over the top. You can save leftover granola for a snack. It tastes great over yogurt too.

With these two warm and wonderful winter recipes, the kids will look forward to their weekend breakfast more than ever. Breakfast is the day’s most important meal, so make it a good one!
