Healthier Versions of Comfort Foods

There’s nothing like the taste of rich, filling comfort foods to warm your belly as the temperature dips. While these foods are so delicious and remind us of our childhoods, they are often loaded with unhealthy fat and calories. Once in a while, it’s certainly OK to indulge, but why not recreate some favorites in a healthier way? Try these lighter versions of your favorite comfort foods this season. They taste just as great and are so much better for your body.

Modified Mashed Potatoes

Thick and creamy mashed potatoes are incredibly tempting as a popular side dish. Most versions are loaded with butter, cream, milk, and such, and become high-calorie and full of fat. You can still get that creamy texture and great taste with a few minor tweaks.

Makes 4 servings.

Peel and boil 4 medium to large Russet potatoes in a large pot for 30 – 45 minutes or until fork tender. Place in a large bowl and mash with a potato masher or hand blender to desired consistency. Add ½ cup low-fat or skim milk, ¼ cup fat-free creamer or fat-free half and half, and ¼ cup vegetable broth. Combine until well-mixed. Add salt and pepper to taste and some Parmesan cheese for a kick if you’d like. These potatoes will be creamy and full of flavor so you won’t miss the original.

Fitter French Toast

The sweet scent and luscious taste of French toast on a cold winter morning is something anyone would gladly wake up early for. However, the traditional recipe is fattening and full of unneeded sugar. You can prepare a lighter recipe for your family and they’ll love it just the same. It’s even quick enough to whip up before school.

Makes 2 servings.

Dunk 4 slices of whole wheat bread into a casserole dish of 4 egg whites beaten with 1 teaspoon cinnamon and 2 packets of sugar substitute, like Stevia (which is a natural substitute). Leave in the pan for about 5 minutes for the mixture to soak into the bread. Spray a large cooking pan with non-stick spray and set to low-medium heat. Place the bread into the pan and heat on both sides until golden brown. Plate the French toast. Top with pureed fresh fruit and a drizzle of honey or serve with all-natural jam.
