Easy Weeknight Supper

While you want to feed you family a wholesome, home-cooked meal in the evening, between work, daycare, school, and the day-to-day grind, it’s difficult to make time for cooking. This doesn’t mean you need to head to the nearest drive-thru or microwave rubbery chicken fingers. You can still make something delicious for your family in a matter of minutes each evening. Your family will never know just how easy your delectable dishes were to make because they’ll be too busy gobbling them up! Here is an idea for an easy weeknight supper that even the least-talented chef can prepare with confidence. With a few variations, you will have a new twist every time you make it. There’s even a quick dessert to top off the meal!

Pita Pizzas

I can’t think of anyone who doesn’t love pizza. With all the delicious variations of sauces, cheeses, crusts, and toppings, there’s a pizza to please every tummy. You can make easy pita pizzas in minutes.

(Makes 4 pita pizzas)

Pre-heat the oven to 325 degrees and lay out four 8” round pitas on a cookie sheet or flat baking sheet. (You can make these in the microwave too, but they won’t have that delicious crisp crust). Use whole wheat, plain, or whatever flavor you like most. Top each pita with a layer of marinara or pizza sauce and a sprinkle of shredded low-fat or whole milk mozzarella cheese. Pop in the oven for about 10 minutes and you are done! Serve with a healthy side salad, veggies and dip, soup, or fruit salad.

Pita Pizza Variations

Veggie Deluxe: Before popping in the oven, top each pita with chopped mushrooms, diced zucchini, slivers of pepper, and diced black olives.

Four Cheese: Along with the shredded mozzarella, add shredded sharp cheddar, shredded Swiss, and a sprinkle of Parmesan or Romano cheese.

White Pizza: Leave off the marinara and spread a thin layer of ricotta cheese over the pita. Top with shredded mozzarella, a sprinkle of black pepper, and minced garlic.

Tasty Trifle Dessert

A trifle is a simple layered dessert that you can whip up in minutes. You can make a big bowl for everyone to take a serving from or make individual servings for each person. These are best made in a see-through glass or plastic bowl or dessert glasses so you can see the beautiful layers. Here’s how to make one:

In a large glass serving bowl, layer the bottom with Lady Fingers or cubes of sponge or pound cake. Top that layer with vanilla pudding or whipped cream. Next, layer diced fruits such as strawberries and bananas. Now, repeat the process of layering these ingredients until you reach the top of the dish. Make the final layer one of whipped cream and decorate with the fruit. That’s all! The family will love this dessert.

Trifle Variations

Chocolate Heaven: Instead of Lady Fingers or the sponge or pound cake, use a devil’s food cake or cubed brownies. Use chocolate pudding instead of vanilla. On the final layer, use chocolate chips to decorate.

Tropical Trifle: Mix 1 cup of sweetened shredded coconut into the vanilla pudding and instead of strawberries and bananas, use diced pineapple and mango.
