Turn a Can of Soup Into a Wholesome Meal

We usually think of a bowl of soup as a light lunch, a snack, or an appetizer before a meal. Did you know soup can be so much more than that? If you have a can of soup in the pantry, you can transform it into a hearty meal. The family will be wowed by your creativity and more importantly, the delicious flavor of their meal. Here are a few recipes for turning soup into supper!

Chicken Tortilla Bowl (Tomato Soup)

You can take a basic can of tomato soup and turn it into a zesty Mexican-themed dish. This will make 2 servings. In a medium saucepan, prepare the soup as instructed. Next, add already cooked shredded chicken, chopped veggies such as diced tomatoes, zucchini, celery, and carrots, and a teaspoon of hot sauce. Fill your bowls with the food once it’s nice and hot and top with shredded tortilla chips. If you do not keep kosher, you can also add some shredded cheddar and a dollop of sour cream. Serve with tortilla chips and guacamole or salsa. Delicious!

Tuna Casserole (Cream of Mushroom Soup)

A casserole is an easy dish to prep for a family in no time. This recipe will yield 4 servings. In a large mixing bowl, combine a can of drained tuna, a can of cream of mushroom soup (condensed and do not add water), diced carrots and celery, chopped onion, a teaspoon of chives, and salt and pepper to taste. Spread the mixture into a casserole dish and top with fried onions which you can buy at the market. Heat at 350 degrees for 30 minutes. Serve with dinner rolls or a side salad. You can even enjoy the leftovers cold the next day (if there are any left!).

Easy Chili (Minestrone Soup)

Kids love chili and homemade is always the tastiest. You can make your own version in a breeze. (Makes 2 servings). In a small pan, brown ½ lb. chopped burger meat in a bit of oil until well-done. Set aside and heat a can of minestrone soup in a medium saucepan as directed. Add the chopped meat along with chopped onion, diced mushrooms, and ½ cup canned red (kidney) beans. If you like it spicy, add some hot sauce or chili powder. Heat until simmering and serve with crispy breadsticks or soft rolls. You can substitute shredded chicken, ground turkey, or use extra beans if you do not want to serve red meat. Enjoy!
