Breakfast Sandwiches for Back-to-School

As we get ready for the back-to-school season, it’s time to think about the morning routine (which is often a rush). What better way to save time and cut down on chaos than to make breakfast a snap?

These two breakfast sandwiches are delicious, kid-friendly, healthful, and easy to make. You can even prepare them the night before so they’re ready when the kids get up for school.

If your kids are old enough and able to, they can help you make these sandwiches, or even do it on their own. Otherwise, you can assemble them in no time, leaving more of those precious morning minutes free for the rest of your to-dos.

Apple and Nut Butter “Burgers”

Get in a serving of fruit, some healthy protein, and a whole lotta fun inside a burger bun! This sweet breakfast sandwich will delight your kids, providing them with something far more wholesome than a bowl of sugary cereal. (Makes 1 sandwich).

Ingredients:

1 hamburger bun (choose whole wheat for added nutrition)

½ sliced apple (any variety) *

2 tablespoons of any nut or seed butter

½ teaspoon ground cinnamon

1 tablespoon honey

Spread the nut/seed butter on the bottom half of the bun. Mix the cinnamon into the honey and pour on top of the nut/seed butter. Place the apple slices on top of the honey and top with the other half of the bun.

This sandwich can be served cold if you’ve made it the night before and kept it in the refrigerator, served at room temperature if you make it before the kids get up, or you can heat it up in the microwave for about 45 seconds – 1 minute for a warm version.

*You can also try this “burger” with sliced pears or sliced bananas.

This sandwich goes well with a cold glass of low-fat milk.

Egg Salad Wraps with Spinach

Rather than a hot egg sandwich, this cold wrap option is great for a quick and easy breakfast which you can make the night before. It’s full of protein and vitamins and will keep the kids full ‘till lunch. (Makes 1 sandwich).

Ingredients:

1 large white or whole wheat soft tortilla wrap

2 hard-boiled eggs, peeled, cooled, and chopped

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

Salt and pepper to taste

1/3 cup fresh baby spinach

Mix the mayo, mustard, and seasonings into the chopped egg until well-combined. Spoon the egg salad onto the wrap, across the center, topped with the spinach leaves. Roll the tortilla tightly and slice down the middle.

Serve with a glass of orange juice for a boost of Vitamin C.

Remember, these sandwiches aren’t just for kids. Make one for yourself too!
